We at Varvello have always admired the refined art of catering, and for this reason over the years we have created lines and products dedicated to this universe and the professional use of vinegar in the kitchens of international cooks and chefs. Our vinegars have become protagonists in the world of catering, and for our family this is a source of pride and satisfaction.
INDICE
THE GOLD LINE TO ENHANCE THE TABLE
To offer diners true gastronomic jewels, Varvello has bottled its most “royal” vinegars according to the best production traditions. The exclusive vinegars and condiments of the Gold Line are dedicated to the most refined tables, both at home and in the restaurant. Varvello’s top-of-the-range line includes:
- Regis Red Wine Vinegar aged in larch wood barrels (100% Italian wine)
- Solaris White Wine Vinegar aged in larch barrels (100% Italian wine)
- Universalis White Condiment
- Nobilius Apple Vinegar aged in barrique (100% Italian apples)
THE MONOVITIGNI LINE: MONOVARIETAL VINEGARS
Just as every high-level restaurant today boasts an important wine cellar, Varvello also boasts a real single-variety “vinegar cellar”. These vinegars are obtained from the precious grapes from which Barolo, Chianti, Cabernet Sauvignon, Prosecco, Moscato and many other world-famous wines are born.
The Varvello line of Monovitigni Vinegars symbolizes our attachment to the Italian winemaking tradition. It is perfect both for the tables of the most sophisticated restaurants, and for seasoning homemade dishes, with simple and genuine goodness.
The range of monovarietal vinegars is a winning bet. After 100 years in close contact with the best Italian wines, Varvello became passionate about vinegars obtained from single, precious varieties of wines. Each taste thus becomes a tasting experience worthy of a Sommelier.
OUR ADVENTURE IN ITALIAN RESTAURANTS
Over the years, it was not only our vinegars that became protagonists in the world of catering. Intrigued by this world, some of us personally got involved in Italian and international restaurants. We recommend some with pleasure!
The Vimini restaurant in Turin is a refined and minimal venue, with a modern and elegant atmosphere, with attention to the smallest details – from the mise en place to the dishes – and as good as the Varvellos like. Veneration of food but also of wine: an irresistible combination for Davide Varvello’s sommelier palate, who never misses an opportunity to be delighted by the Restaurant Staff.
The Varvello vinegars are the protagonists in many other Italian restaurants, eg Scannabue Caffè Restaurant (Turin), La Gallina Scannata – Pescheria Ristorante (Turin) and CIAO PAIS Hotel & Restaurant (Sauze D’Oulx).
VARVELLO AT THE RESTAURANT ALL OVER THE WORLD
In the rest of the world, Varvello brings the Italian taste to the kitchens of many clubs and international restaurants. From Bali to Tokyo, from Panama to Canada, passing through Moscow, Seoul, Cape Town, Cairo and Sharm el-Sheikh!
Also in New York City Varvello is the guest of honor at the tables of La Panineria – Cucina & Wine Bar, an authentic Italian “sandwich shop” in the heart of New York’s Greenwich Village, which has been operating for 10 years. The vinegars signed by Varvello (official partner) are on sale to the public and used in the 100% Italian menu.
Also in Shanghai you can find our vinegars in the Atto Primo on the Bund restaurant (20 Guangdong Road, Shanghai, China), even recommended by the Michelin Guide! In a historic building circa 1925 on the Bund with Pudong views, this Italian restaurant prides itself on the atmosphere enjoyed at its counter seats in front of a grill and pizza oven. The Piemontese owner chef Gianluca (an old friend of the Varvellos) feeds diners the Italian way – with well-made, attractive food in generous portions. Highlights include vitello tonnato, saltimbocca alla Romana served with gnocchi, and cannolo Siciliano with ricotta cream and pistachio filling.
